A loose Bees Knees variation with a boozy backbone.
2 oz. pineapple-infused bourbon
.5 oz. sweet vermouth
.5 oz. Yellow Chartreuse
.25 oz. honey
(optional egg white)
Combine ingredients and shake over ice. If using the egg white add it in with ingredients and do a quick dry shake instead. Serve up in a chilled coupe glass. Garnish with an orange twist.
-1.5 cups of fresh pineapple for every .5L bourbon
-Pinch of pumpkin pie spice (to taste)
-Combine in a bottle and let sit for 24-48 hours, rotating occasionally to mix the ingredients
-Strain through cheesecloth into a clean bottle, and keep refrigerated
