After finding gorgeous Blue Hawaii on IG, I experimented with one of my own and is in the recipe below. The authentic recipe was created by Harry Yee in 1957 at the now Hawaiian Hilton. Yee’s original has equal parts of Vodka & Light Rum, an ounce of “sweet & Sour” mix along with 3 oz of pineapple juice. His is a sweeter, punchier version intended for an ice filled hurricane glass, mine is best in a cocktail glass...a Nick & Nora does nicely.
1 oz Capt. Morgan Spiced Rum
1 oz Malibu Rum
1.5 oz Pineapple Juice
0.5 oz Blue Curaçao
Optional: 1/2 egg white or Fee Bros Foam
Add all ingredients to a cocktail shaker. (Note: if you choose to include egg white, dry shake for 30 seconds).
Add ice to the shaker, then shake for 20 seconds.
Double strain into a Nick and Nora glass.
Note: In my experimentation I had tried different ratios and garnished with a lime but I prefer where I ended up.
