About this Cocktail
I'm a big fan of ginger, and San Pellegrino's Blood Orange Soda, so this drink made a lot of sense to me.
Using fresh ginger really wakes it up.
The Infusion for Lemon Thyme takes 3 or so days to start any real retention of flavor, but I'd recommend waiting 5 days before removing the Lemon Thyme.
1.5 Ounce Aperol
.25 Ounce Lemon Tyhme-infused Honey
.25 Lemon Juice
.25 Ounce Shaved Ginger
San Pellegrino Blood Orange Soda
• Muddle fresh ginger in pint glass
• Add honey, lemon juice, and ice
• Shake until frost forms on the exterior
• Double-strain (Hawthorn and fine mesh) into lowball glass with rocks
• Top with San Pellegrino
• Garnish with orange skin
