1.5 oz St George Botanivore Gin
0.25 oz Green Chartreuse
0.75 lime juice
0.5 oz simple syrup
0.125 oz champagne vinegar
Pinch of salt
Muddle celery with a pinch of salt. Add the remaining ingredients and shake over ice. Double strain Into a coupé. Add two dashes of celery shrub. Garnish with celery leaf.
