My take on a drink from "Liquid Intelligence." Dave Arnold's is with Cabernet and has two ounces of water that he then carbonates. You could add two ounces of club soda. Lacking bubbles and having this red, I went for a shaken drink. I also let the egg wash sit for an hour and not three (limited delayed gratification right after work).
120ml Egg-washed Garmenere (red wine of your choosing)
15ml Lemon Juice
15ml Simple Syrup
Shake all ingredients together with 120g of ice for 15 seconds. Strain into cocktail glass or coupe (I broke mine recently which accounts for the cocktail glass).
