35ml Lepanto Brandy de Jerez
10ml Madeira Seco 5yo
35ml Figgy pudding syrup*
Add all ingredients to an ice filled cocktail shaker and shake until chilled and diluted. Strain into a chilled coupe glass and garnish with a fig and blue cheese skewer.
For the Figgy Pudding syrup mix 1.5litres of cloudy apple juice, 900g dried figs, 50g crushed allspice berries and boil for 20 minutes. Allow to cool and leave in the fridge for 3 days before blending and passing through a sieve.
