About this Cocktail

I created this cocktail for use at Blackberry Farm, a Relais & Chateaux resort located in Walland, TN. The base of the cocktail is a natural rough-cut sugar cube muddled with fresh lemon juice and 3 cucumber wheels. Cucumber is a great source of vitamin B, and the water content helps keep the body hydrated. The Junipero Gin, from the Anchor Distilling Co. in San Francisco, is made by hand in the classic “distilled dry gin” tradition, which utilizes more than a dozen botanicals in their natural state. Instead of filling the glass with champagne as in the original recipe, this libation is completed with sparkling water and then glazed with champagne. This reduces the cocktail by about 90 calories while still giving the desired bubbles and brut taste. A great way to be healthy and happy. Check out the video

  • 1.5 oz Junipero Gin
  • 3 Cucumber wheels
  • 1 Rough cut sugar cube
  • 1/2 a lemon freshly squeezed
  • Sparkling water
  • Champagne
  • 1 thick lemon peel

In an empty rocks glass, place 3 cucumber wheels over a rough cut sugar cube. Freshly squeeze ½ a lemon into the glass and then muddle it all together. Fill the glass with ice and add the gin. Fill the glass with sparkling water and then glaze the top of the cocktail with house champagne. Garnish with a lemon peel.
