About this Cocktail

Two tiki classics mashed up, the Port Light and some elements of the Test Pilot, that I crafted for a drink of the day at Loyal Nine in Cambridge, MA. The drink name makes reference to the specimen purchased in the South Pacific in 1822 that made its way to PT Barnum's exhibitions in 1842. Though lost in a fire, this monkey's head and torso sewn on to a fish's posterior was replicated for sideshows throughout the next century or so.

  • 1 oz Four Roses Bourbon
  • 1 oz Rhum Barbancourt 8 Year
  • 1/2 oz Passion Fruit Syrup
  • 1/2 oz Grenadine
  • 1/2 oz Lemon Juice
  • 1 dash Angostura Bitters
  • 10 drops St. George Absinthe

Shake with ice, strain into a double old fashioned or other glass (or tiki mug), fill with crushed ice, garnish with a lemon peel mermaid's tail and freshly grated nutmeg, and add straws.
