My first foray into gin cocktails. Certainly not my last.
Fill cocktail shaker with ice. Add gin, lemon juice and syrup and shake until well combined (about 15 seconds).
Strain into champagne flute and top with sparkling wine. Stir gently to combine.
Garnish with lemon twist and cherry.
Note - I use amareno cherries because I prefer the rich, sweet flavor of them over the candy flavor of glacé cherries. They also add an interesting color development when dropped into the cocktail.
