For Negroni Week 2017, this cocktail is a mashup of an Aperol Spritz and a Negroni, but with China-China Amer substituting for the vermouth. The drink retains the refreshing nature of an Aperol Spritz but with greater depth of flavor.
1.0 oz London dry gin
0.75 oz Campari
0.75 oz Bigallet China-China Amer
3.0 oz Sparkling wine
Add the gin, Campari and amer in a mixing glass. Stir with ice and strain over fresh ice in a wine glass. Add the sparkling wine. Stir gently to combine, but minimizing the loss of bubbles. Express an orange twist on top. While this drink could be built directly in the wine glass, it can be a bit spiritus during the first few sips. Mixing the ingredients and then straining over fresh ice both chills the drink and provides the right amount of dilution.
