We had some amazing local blueberries about a month ago, so I used them to make a shrub. It was hot as hell the other day, so wanted something light and summery and this fit the bill. Inspired by the Ideal Cocktail recipe and adjusted a touch because of the acid of the shrub.
1.5 oz. Jensen London Dry Gin
1.5 oz. Grapefruit Juice
.5 oz. Blueberry Thyme Shrub (see below)
1 Barspoon Genepi Guillamette
1 dash Bittermen's Tiki Bitters
Shake all ingredients over ice and strain into a chilled glass. Garnish w grapefruit peel and if you are so inclined throw in a delicious luxardo cherry for good measure.
For the blueberry shrub, use 2 cups fresh blueberries, 1 cup sugar, 8 sprigs of fresh thyme, and 1 cup of apple cider vinegar...the good kind. Combine the fruit and sugar and let sit for 2 days, combine the vinegar and thyme separately and let sit for the same amount of time. Combine the ingredients after the 2 days and then strain them until the crap is gone...let it sit for a bit before drinking.
