I should have known better. I’ve seen this cocktail in plenty of places, but most recently from TheNickRomancer. But I riffed & went with Aperol over Campari. Look, you give it a try, but next time I’m going with the Campari.
Created in the mid-1990s by Paul Harrington at Townhouse bar, Emeryville, California & named after his college friend, Matt Jasmin, who challenged Paul to "Make me something you've never made before." Inspired by the classic Pegu Club, this cocktail is the result of that challenge. 1 1/2 oz Gin
3/4 oz Freshly Squeezed Lemon Juice
1/4 oz Cointreau
1/4 oz Aperol (or Campari in the original recipe)
Lemon Peel Garnish
Combine all the ingredients in a mixing glass with ice and stir until well chilled (Note: there are recipes which defer to shaking the cocktail).
