About this Cocktail

For a spirit-centric competition, I fused two pineapple-forward drinks together, the Royal Hawaiian and the Pago Pago, for I felt that they would go with the original rum's coconut notes in a Piña Colada sort of way. I went with the Pago Pago's rum over the Royal Hawaiian's gin, but kept the Royal Hawaiian's lemon over the Pago Pago's lime. Since I could not attend the competition due to my work schedule, I adapted the recipe for an aged rum. For a name, I dubbed this one after the 18th century Hawaiian chant telling their creation story

  • 2 oz Aged Rum
  • 2 oz Pineapple Juice
  • 1 oz Lemon Juice
  • 1/2 oz Orgeat
  • 1/4 oz Green Chartreuse
  • 1/4 oz oz Crème de Cacao

Whip shake, pour into a Tiki mug, fill with crushed ice, and garnish with mint.
