About this Cocktail

Original for Trattoria Piatto, Carlisle PA

I wanted to find a way to utilize the vibrancy of Strega without any of the astringency.

This ones for the Dad of all Dads.

Ingredients:
  • ~.5 oz Red bell pepper essence
  • .75 oz Strega
  • .5 oz Contratto
  • .25 oz Pineapple juice
  • 1 Lemon wedge
  • 3 dashes Orange bitters
  • Prosecco to top
  • Curly Parsley to garnish
Preparation:

Red bell pepper essence: 3 peppers, diced and puréed with 3/4 c of water. Strained, and pressed through cheesecloth. Reduced by ~3/4 by simmering boil, constantly stirred for approximately 15 minutes.

In cocktail shaker add all ingredients save for Prosecco. Add ice, shake until frosted. Double strain into N&N glass, top with Prosecco. Garnish with sprig of Curly Parsley
