Scarlet Ibis is difficult to find. It’s a Trinidad rum, aged 3-5 Years, high proof (49%). Use Jamaican rums as substitute (Smith & Cross, Zaya 12 year) or other aged rum. Avoid the quick rums (Captain, Bacardi, etc.).
1.5oz Scarlet Ibis Rum
1/2oz Cruzan Black Strap Rum
1oz Dolin Rouge Vermouth
1tsp Lazzaroni Amaretto
1 dash Fee Brothers Whiskey Barrel-aged bitters
Stir all the ingredients over ice, then strain into a coup. No garnish.
