A variation on a Manhattan, this cocktail swaps out the usual sweet vermouth for Averna amaro. Rich and viscous with notes of honeycomb, orange and baking spices, Averna amaro pairs perfectly with bourbon’s woodsy, malted sweetness. As a substitute for Angostura bitters, the Prospector calls for a bone-dry sherry for depth. Perfect for chilly winter weather that demands the comfort of a cashmere sweater and a stiff drink.
2 oz Bourbon
¾ oz Averna Amaro
½ oz Pedro Ximénez Sherry
1. Add all ingredients to a mixing glass, except for the garnish. Add ice and stir.
2. Using a julep strainer, strain the cocktail into a chilled coupe glass.
3. Garnish with a lemon twist.
