About this Cocktail

A riff on the Rose Rickey from TheWeekendMixologist...a refreshing, fruity cocktail certain to quench your thirst!

Ingredients:
  • 2 oz Empress Gin
  • 1/4 oz Benedictine
  • 1/4 oz Mathilde Raspberry Liqueur
  • 1/2 oz Freshly Squeezed Lime Juice
  • Dash of Angostura Bitters
  • 1 - 2 oz Tonic (for topping)
Preparation:

Combine all ingredients less the tonic into a cocktail shaker filled with ice and shake until well chilled.

In a chilled high ball (or similar) glass, fill it halfway (ideally) with pebble ice, then fill the glass with the shaker contents.

Top with tonic and add more pebble ice if needed.
