An original loosely based on the classics with Lady in the name.
1 oz Sage (Gin will also work)
3/4 oz St Germaine
3/4 oz Lemon juice
3 dashes Habanero shrub
Place cherry into a coupe and spoon a bit of juice on top. Dry-shake all remaining ingredients. Add ice and shake more. Double-strain into a coupe. Once egg white rises, top the foam with a line of habanero bitters.
