About this Cocktail

This was a cocktail special I ran on New Year's Eve, hence the name.

I just love Amaro Averna. Figs to play up the richer notes made a lot of sense, as did Prosecco to lighten the body and add effervescence.

  • 1 Ounce Amaro Averna
  • .75 Ounce Fig & Brown Sugar Syrup
  • 1 Dash Scrappy's Chocolate Bitters
  • Prosecco to top

• Add Averna and fig syrup to flute

• Top 2/3 of flute with prosecco

• Stir

• Finish topping with prosecco

• Dash chocolate bitters

    So how do you make the fig brown sugar syrup?

    Start with two cups of dried figs, cut into halves, add 3 cups water, 2.5 cups brown sugar and .5 cup of white sugar. Reduce. Also reduce .5 cup of Averna. When both reductions are finished, combine the ingredients, allow to rest for 20 minutes, then strain with wet cheese cloth.
