1.25 oz Vida Mezcal
.75 oz Ancho Reyes
.5 oz lime juice
.5 oz honey syrup
5 - 6 dash Peychaud's bitters
Pinch applewood smoked sea salt
3 or 4 chunks fresh pineapple
Muddle pineapple chunks, honey syrup, smoked sea salt in mixing glass. Add remaining ingredients and shake briefly but briskly. Double strain over ice of your liking into glass of your liking. Top with splash or two of club soda. Enjoy the sneaky spice and sneaking suspicion that, indeed, everything is going to be alright.
