About this Cocktail

J. “Popo” Galsini’s mid-1960’s riff on Donn Beach’s Pearl Diver.

Ingredients:
  • 1 oz gold Puerto Rican rum
  • ¾ oz demerara rum
  • ½ oz brown Bahan rum
  • ¾ oz fresh lemon juice
  • 1½ oz orange juice
  • 1½ oz honey syrup (1:1 honey + water)
  • ½ oz heavy cream
  • 2 dashes Angostura bitters
  • 6 drops vanilla extract
  • 1 cup crushed ice
  • Garnish: orange peel, geranium leaf
  • Equipment: blender
Preparation:

Put everything in a blender, and blend until smooth. Pour unstrained into a specialty glass. Garnish with a geranium leaf, with straw pierced through leaf.
