celebrate Cinco de Mayo with this guy - it Packs some real heat with chipotle then use lots of smoked salt & a little mezcal then balance with fresh pineapple to get a super drinkable sexed up take on the Bloody Maria
1 shot reposado tequila
Bar spoon mezcal
1/2 shot port
1/2 shot lime juice
Premixed hot sauce with fresh pineapple chunks, smoked sea salt, Pineapple juice, tabasco, Worcester sauce, chipotle chillis, leave to infuse add based on taste
All about the prep.
Leave all ingredients of hot sauce premix to infuse in the fridge lots of smoked sea salt & everything hot including Tabasco & chipotle. Balance with pineapple for hot/smoky/sweet sauce
Marinate lime wheels, pineapple chunks, chipotle in smoked sea salt & pink peppercorns with lime juice. Add to skewers and dehydrate. If you don't have a dehydrator just go fresh. I just do this because it looks cool and preserves the garnish.
Add all ingredients to Boston glass, ice, roll & pour into glass with Himalayan pink rock salt rim & skewer.
Throw more salt at end & drizzle extra port.
