I created this drink for the Death & Co tiki recipe contest last year. I love coming up with new ways to use Plantation's Pineapple rum, and turns out it works quite well with the bittersweet, rhubarb based Zucca Rabarbaro.
1.5 oz Plantation Pineapple rum
.5 oz Zucca Rabarbaro
.5 oz fresh lime juice
.5 oz fresh grapefruit juice (pink)
.25 oz BG Reynolds Tiki Spices syrup
.25 oz pineapple gum syrup
Vigorously shake all ingredients with ice. Serve over crushed ice (or dirty dump) into vessel of your choosing, garnish away.
Also, adding a little Hamilton 151 never hurt anybody...
