At Area Four in Boston, I started with the Test Pilot and added in mango puree -- an ingredient that was going underutilized at the bar. The curaçao didn't work well, so I subbed in Green Chartreuse since it often pairs well with falernum. Having made a Jet Pilot drink called the Lost U-Boat, I dubbed this Test Pilot riff the Submarine Driver.
Whip shake, pour into a Tiki mug, fill with crushed ice, and garnish with an orchid and a lime wheel.
(*) We use Perfect Puree brand, but muddling a cube of fresh mango (plus a fine strain step) will work well here. Perhaps 1 oz of mango nectar would sub in a pinch.
