Since coming back from Ireland I cannot stop drinking Irish Whiskey. So, of course I’m putting it into drinks not normally associated with it, such as this: my take on a traditional Mai Tai.
1.75 oz Tullamore Dew Irish Whiskey
0.5 oz Plantation Stiggins’ Fancy Pineapple Rum
0.5 oz Demerara Syrup (1:1)
1 oz Fresh Lime Juice
0.75 oz Fresh Pineapple Juice
0.25 oz The Bitter Truth Golden Falernum
Prepare a bunch of crushed ice beforehand by using either a Lewis bag or muddling ice in a shaker tin. Then add everything to a new shaker filled with ice and give a good 15-20 second shake. Fine strain into either a stemless wine glass or double old fashioned glass full over the brim with the crushed ice. Grab a nice big bunch of mint, slap that baby (make it free!) to release the aroma and oils, then stick it right in the glass. You’ll be walking that rainbow bridge in no time!
