As the peak of summer hits and begins to wane, I've been craving cocktails (or seltzer water) with Lavender Bitters and a Lemon Peel. Once again, Mayfair Gin shines through with it's depth of herbal notes and smooth mouth feel. This is a smooth, dry, tart and herbalescent homage to the English Garden.
-Add Gin, Dolin Blanc, Honey Syrup, Lemon Juice, Lavender Bitters, Thyme, Pernod and ice to tin. Shake, shake, shake shake.
-Double strain into Double Rocks glass over one large cube of ice.
-Float dropper full of Fernet on top.
-Express lemon peel and garnish
