The Governor's Punch from Wine Enthusiast (https://www.winemag.com/2011/08/08/cococut-water-cocktails/). For ours we used the homemade coconut rum from Serious Eats (https://www.seriouseats.com/recipes/2012/03/diy-coconut-rum-homemade-captain-morgans-recipe.html). The recipe calls for Cayman limes which are otherwise known as Key limes. A reasonable substitute is half a lime. Also I used one Demerara sugar cube for 4 poured cocktails. Adjust ingredients for taste. It should start out slightly too sour but serve with ice. The melt will help it open up and balance. Upon drinking, the whole was reminiscent of slightly underripe lychees for me.
2 oz coconut water
1 oz coconut rum
Juice of half or quarter of a lime or half a Key/Cayman lime
1/2 a brown sugar or Demerara sugar cube (a dash)
(Optional) coconut flakes for garnish
Shake the hell out of everything in a shaker. Pour into a rocks or double old fashioned glass with rocks (we use king cubes). Use real ice for melt. Serve with or without garnish. It's light and delicate.
