About this Cocktail
This drink comes as a result of my own personal Tequila Challenge: I'm trying to get NYC to think of Tequila as seriously as they do Whiskey, Gin and Rum.
The name of the cocktail came from my girlfriend who after drinking the first sip exclaimed, "can we name it after Penelope Cruz?" YEP!

1 oz Reposado Tequila (Espolón used here)
1/4 - 1/2 oz Ancho Chile Infused Reposado Tequila
1/2 oz St-Germain
1/2 oz Punt e Mes
2 Dashes Orange Bitters
2 Pineapple Chunks
In tin, muddle pineapple and add remaining ingredients. Shake, shake, shake over cracked ice. Double Strain into rocks glass over one big rock. Salud!
