Raspberry mojito

A classic drink that everyone has a favourite recipe for, so I thought I'd share mine. a pretty traditional style; both simple and fresh... And delicious. I forgot to say delicious.

  • 2 oz good white rum
  • Tsp chambord for colour and flavour
  • 4 or 5 good sized lime wedges
  • 2 tsp Demerara sugar
  • 8 fresh raspberries, plus a couple for garnish
  • Few stalk or fresh mint
  • Cubed ice
  • Club soda

Muddle the sugar limes & raspberries with a good bit of elbow grease in the bottom of a Collins glass until nicely, well, muddled.

Chuck all the mint bar a good and big garnish sized stalk, into the Collins. Stalks and all. Muddle gently to only to bruise the mint, not tear it up.

Fill with cubed ice, and add the booze. Give it a mix with a bar spoon.

Top up with club soda, and mix it through.

clap your mint garnish to bring it to life and chuck it on top with a couple of raspberries and two straws... So your nose is buried in fresh mint when you take a sip.
